Brandon is a pastry sous chef at Chez Christophe Patisserie in Burnaby, BC. He's been a proud member of our team since 2020.
Where are you from?
I was born and raised in Calgary, Alberta, and moved to Vancouver in 2018.
Did you go to school for this?
I attended the SAIT cook apprenticeship program and completed my red seal training in 2016.
When did you know you wanted to work in the pastry and café world? Why?
When I began my cook apprenticeship, my interest in pastry and baking took over. I would offer my time whenever I could to the Pastry Chef in hopes of learning a new technique or recipe. The finesse and precision of tasty edible art were mesmerizing, and it was a path I took full-time not long after.
What inspires your creativity in the kitchen?
Inspiration can be found everywhere and at any time, but especially in the seasons and our fresh local ingredients.
What do you do in your free time?
Cooking and baking with my wife or camping and enjoying nature with our dog.
